Ingredients

  • 6 Earl Grey tea bags or 6 tablespoons loose-leaf Earl Grey tea
  • 1 pound about 454 g fresh strawberries, washed, hulled, and sliced
  • 2 cups freshly boiled water
  • 1 tablespoon honey or cane sugar
  • 1 teaspoon fresh lemon juice
  • ¼ teaspoon culinary bergamot oil
  • Fresh mint leaves for garnish

Equipment

  • Medium saucepan
  • Measuring spoons
  • Knife and cutting board
  • Serving glasses or mugs
  • Heatproof bowl or teapot
  • Fine mesh strainer
  • Wooden spoon

Method

Step 1: Brew The Earl Grey Tea
  1. Place the tea bags or loose leaf tea into a large teapot or heatproof bowl. Pour the boiling water over the tea and let it steep for 5 minutes. Remove the tea bags or strain out the loose leaves. Set the brewed tea aside to cool slightly.
Step 2: Prepare The Strawberry Jam Base
  1. Add the sliced strawberries, honey (or cane sugar), and lemon juice to a medium saucepan. Cook over medium heat for 8–10 minutes, stirring occasionally. The strawberries will soften and release their juices, creating a thick, jam like mixture.
Step 3: Combine The Tea And Strawberry Mixture
  1. Remove the saucepan from the heat and stir in the culinary bergamot oil. Pour the brewed Earl Grey tea into the strawberry mixture and stir until well combined. For a smoother drink, strain the mixture through a fine mesh strainer. For a more rustic texture, leave some strawberry pieces in the tea.
Step 4: Serve And Garnish
  1. Pour the strawberry jam tea into serving glasses or mugs. Garnish each serving with fresh mint leaves. Serve warm for a comforting drink or chill before serving over ice for a refreshing fruity tea.
