  • 2 cups plain all purpose flour

  • ½ cup vegetable shortening or butter softened
  • 2 large eggs room temperature
  • 1 teaspoon baking soda

  • ¼ teaspoon ground cloves
  • ¼ teaspoon ground ginger
  • ½ teaspoon fine salt
  • ½ teaspoon ground allspice
  • 1 teaspoon pure vanilla extract
  • 2 cups unsweetened applesauce
  • 1 cup raisins soaked in warm water for 10 minutes and drained
For The Frosting
  • 8 ounces cream cheese softened
  • ¼ cup butter softened
  • cups powdered sugar sifted
  • ½ teaspoon pure vanilla extract
  • tablespoon fresh lemon juice
  • 2 tablespoons milk only if needed for a smoother consistency

Method
 

Step 1:
  1. Heat your oven to 350°F (175°C) before you start mixing the batter. Coat a 9×13-inch baking pan with butter or baking spray, then dust it lightly with flour. You can also line the pan with parchment paper if you want the cake to lift out easily after baking.
Step 2:

Step 3:
