- Heat the olive oil or unsalted butter in a large soup pot over medium heat. Add the onion, carrots, and celery, then cook for about 5 minutes until they start to soften. Stir in the garlic and cook for another 30 seconds.

- Pour in the chicken stock and water, then add the thyme, black pepper, and bay leaves. Give everything a gentle stir and bring the soup to a light simmer.

- Add the chicken to the pot, cover it, and let it cook for 20–25 minutes. The chicken should reach 165°F (74°C), while the vegetables should become tender.
Step 4
- Take the chicken out and let it rest for a few minutes. Shred or chop it into small pieces, then place it back into the soup. Remove the bay leaves and stir in the fresh parsley.
Step 5
- Finish with fresh lemon juice and give the soup a gentle stir. Taste it before adding salt, since keeping the sodium low is the goal. Serve the soup warm.
