Ingredients
  

  • 1 ghost pepper seeds removed and finely chopped
  • cups tomato ketchup
  • ½ cup white vinegar
  • 1 tablespoon extra virgin olive oil
  • 1 small onion finely diced
  • 3 fresh garlic cloves minced
  • ½ teaspoon fine salt
  • ¼ cup brown sugar or pure honey
  • ½ teaspoon ground cumin
  • ½ cup unsweetened pineapple juice
  • 1 tablespoon ground chipotle powder
  • 1 tablespoon Worcestershire sauce

Method
 

Step 1
  1. Pour the olive oil into a medium saucepan and warm it over medium heat. Add the chopped onion and cook until it turns soft and translucent, about 4 to 5 minutes. Mix in the garlic and finely chopped ghost pepper, then stir for another minute until the aroma develops.
Step 2
  1. Add the ketchup, white vinegar, brown sugar or honey, Worcestershire sauce, salt, ground cumin, pineapple juice, and chipotle powder. Stir everything well until the ingredients come together into a smooth, even sauce.
Step 3
  1. Lower the heat and allow the sauce to cook gently for 15 to 20 minutes. Give it a stir every few minutes so nothing sticks to the bottom of the pan. As it simmers, the sauce will become thicker and the sweet, smoky, and spicy flavors will blend beautifully.
Step 4
  1. Blend the sauce until completely smooth using an immersion blender, or carefully pour it into a standard blender and process until silky. Let the BBQ sauce cool to room temperature, then transfer it to a clean airtight jar or bottle and refrigerate until ready to use.
