Chai Tea Recipe is a warm, aromatic Indian inspired beverage made by simmering English breakfast tea bags with milk, sugar, and fragrant spices such as cardamom, cinnamon, ginger, cloves, pepper, and allspice.

Ingredients
  

  • 2 cups 480 g water
  • 1 cup 240 g whole milk
  • 2 English Breakfast tea bags
  • 2 –3 tablespoons 25–38 g granulated sugar, to taste
  • 2 cardamom pods lightly crushed
  • 1 heaping teaspoon 3–4 g cinnamon bark, or 2 short cinnamon sticks
  • 3 thin slices 10 g fresh ginger
  • 3 whole cloves
  • 4 black peppercorns lightly crushed
  • 1 small piece star anise
  • 1 small pinch ground nutmeg
  • 6 –7 whole allspice berries

Equipment

  • Medium saucepan
  • Measuring spoons/cups
  • Fine mesh strainer

Method
 

Step 1
  1. Add the water, cardamom, cinnamon, ginger, cloves, black peppercorns, allspice, star anise, and nutmeg to a medium saucepan. Bring everything to a boil, then lower the heat and let it simmer for 5–7 minutes so the spices can release their flavor. Add the tea bags and simmer for another 2 minutes.
Step 2
  1. Pour in the whole milk and stir in 2 tablespoons of sugar. Heat gently for 2–3 minutes, stirring from time to time, until the chai is hot but not boiling. Taste and add more sugar if you like it sweeter. Remove from the heat, strain into cups, and enjoy while hot.
