  • 2 pounds 900 g chicken wings, split into drumettes and wingettes
  • 1 tablespoon aluminum free baking powder
  • 1 teaspoon salt or to taste
  • ½ teaspoon ground black pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • ½ teaspoon smoked paprika
  • 2 teaspoons cayenne pepper adjust to preferred heat
  • 1 tablespoon cooking oil
  • ½ cup all purpose flour or cornstarch for an extra crispy coating
For The Buffalo Sauce
  • ½ cup Frank’s RedHot Original Sauce
  • ¼ cup unsalted butter
  • 1 tablespoon white vinegar
  • 1 teaspoon Worcestershire sauce
  • ½ teaspoon garlic powder
  • 2 tablespoons additional hot sauce for extra heat

Method
 

Step 1:
  1. Dry the chicken wings thoroughly using paper towels to help them crisp during baking. Add the wings to a large mixing bowl, then sprinkle in the baking powder, salt, black pepper, garlic powder, onion powder, smoked paprika, cayenne pepper, cooking oil, and the optional flour or cornstarch. Toss everything together until each wing has a light, even coating.
Step 2:
  1. Heat the oven to 425°F (220°C). Cover a baking tray with aluminum foil and place a wire rack on top. Arrange the seasoned wings in a single layer, leaving a little space between each piece so the hot air can circulate freely and create a crisp exterior.
Step 3:
  1. Bake the wings for 20 minutes, then carefully turn each one over using tongs. Return them to the oven and bake for another 20 to 25 minutes until they develop a deep golden color and crunchy texture. The thickest part of the meat should reach 165°F (74°C).
Step 4:
