Step 1
- Preheat your oven to 350°F (175°C) and lightly grease a 9×13-inch baking pan. In a large bowl, mix the German chocolate cake batter following the directions on the box usually water, oil, and eggs. Pour the batter evenly into the prepared pan.
Step 2
- Drizzle ½ cup of melted butter evenly over the cake batter. Then sprinkle 2½ cups of powdered sugar on top. Don’t worry about spreading it this layer will sink into the batter as it bakes, creating the signature “earthquake” effect.
Step 3
- In a medium bowl, beat together the softened cream cheese and ½ cup butter until smooth and creamy. Slowly add 3 cups powdered sugar (you can use up to 4 cups if you like it sweeter) and mix well. Fold in the shredded coconut and chopped pecans.
Step 4
- Drop spoonfuls of the cream cheese mixture across the top of the cake batter. Sprinkle semi-sweet chocolate chips over it. There’s no need to spread or swirl the topping will naturally sink and swirl in the oven, giving the cake its unique look.
Step 5
- Place the pan in the oven and bake for 40–45 minutes, until the cake is set and lightly golden. A toothpick inserted into the center should come out mostly clean, with just a few moist crumbs from the topping.
Step 6
- Let the cake cool completely in the pan on a wire rack. Cut into 12 pieces. For a finishing touch, sprinkle extra shredded coconut or drizzle a little chocolate on top before serving.
